In this course, we'll learn how to make interesting, yummy dishes from all over the world, whilst focusing on specific cooking techniques and kitchen skills. We'll focus on a different technique each week and practice our kitchen skills while learning about the history and the significance of the techniques in different cuisines. How to make different types of dough? Working with pastry? How many ways can you prepare a vegetable, and which is the yummiest?

During this course, you'll be creating your own cookbook, incorporating skills of recipe making and budgeting. This will be a significant and ongoing project that we work on through the course of the term.

There will be a 50:50 classroom to kitchen ratio in this class, as well as a high expectation of attention and care.

As we are in the kitchen, a high level of discipline will be an essential component of your involvement in the class. Because of this, there will be no devices allowed in the kitchen, and very minimal use in the classroom, if any at all. Please be aware that you will be required to demonstrate your willingness to learn and follow the rules and regulations that will be in place in the kitchen.

This course will have a cost of $40/term. This will be charged to your school account, and will cover the cost of ingredients for the dishes we make. You'll be able to take the food home to share!
